Keto Cinnamon Butter Cake

This is an amazing, moist and perfectly rich cinnamon butter cake. Plus, it is Keto compliant! This "breaking your fast" cake is amazing with a cup of decaf organic coffee! Macros provided. We hope you enjoy!

Ingredients
  

  • 6 large eggs
  • 1/2 cup Swerve granulated, regular
  • 1 cup melted butter
  • 1 cup heavy whipping cream
  • 2 cups blanched fine ground, almond flour
  • 1/4 cup coconut flour
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves optional
  • 1 tsp sea salt
  • 1 tsp pure vanilla extract
  • 1 tsp baking powder

Instructions
 

  • Preheat oven to 375 degrees F
  • Place eggs in a food processor and add Swerve, pulse until well mixed, about a minute or so.
  • Add melted butter (be sure the butter has been allowed to cool but not harden, if you pour in hot butter it will cook the eggs, slowly drizzle in the butter)
  • Add heavy whipping cream
  • Pulse until well combined and slightly thickened, about 1-2 minutes
  • Next add flours, spices, sea salt, and vanilla (do not add the baking powder yet), pulse until well combined, about a minute or so.
  • Add baking powder and pulse a few times to gently incorporate baking powder.
  • Line standard 9-inch cake pan with parchment paper.
  • Pour batter into pan and smooth out with a spatula.
  • Bake approx. 40-50 minutes or until knife inserted in middle comes out clean.
  • Allow to cool approx. 15-20 minutes, cut into 12 equal slices and serve.

  1. Hi….this turned out great! My question is how to store it. What is your recommendation? Thanks.

    1. We cut them into equal pieces (12 I believe) and then put them into glass storage containers with lids. Ours kept on counter for 3 days. However, not sure if this is the proper way to store something like this (meaning not sure if it should have been in the refrigerator) so, please research and use your best judgement as we are not responsible for foods that are not stored properly. Just sharing what we did. Thanks so much for writing.

    1. The batter should not be “runny.” I’ve made this, at least, 10 times or more and never, ever has the batter been runny. I’m not sure what to suggest since I was not there to see exactly what you did and/or used, sorry.

  2. That is the fabulous thing about each of us… we are all different and all have different taste. Just as some like things spicy and others do not. Now that you have a foundation, play with it to make it fit your own unique taste buds! Increase the sea salt, cinnamon, and/or Swerve until it is just the way you like it. You can also add in some freshly grated ginger to spice it up a bit! Have fun and enjoy!

  3. I made this and turned into a super spice cake! lots of ginger, nutmeg, cinnamon, and ground cloves…..It is wonderful, I add butter cream cheese icing my husband will even eat it!!! I love to have it in the house <3

  5. I made this and it is amazing! came out perfect. I added a Lot of extra spices and it was wonderful, and my husband eats it too, was going to try it as a Lemon cake. Will Let you Know how it works 🙂 My fave Keto Cake yet, so many ways yo make it your own.

  6. I tried the Lemon cake…! Love it, added 2 tsp of ginger and 2 tsp of nutmeg. I added 1 packet of sugar free Lemon aid drink and 4 table spoons of stevia. everything else is exactly the same. Turned out amazing!!!!!!! this is by far the best cake ever, thank you!

    1. I’ve only made the recipe with granular Swerve but I have heard others say they can be used interchangeably but I make no guarantees. If you do use it, please let me know how it turns out.

  7. Hi I made this cake and it was absolutely perfectly delicious but when I went back to this website to retrieve the recipe again it is gone. I only see a weird message on the top and the reviews on the bottom but no recipe for the cinnamon butter cake. Can you please repost or send it to me please.

  8. How did you come up with the carbs? When I put the recipe in my carb counter app I end up with13 grams of carbs. You show 4.3 grams. It’s fantastic tasting!!

    1. Many Keto APPs do not count the carbs in Swerve because it is a sugar alcohol with zero net carbs. I am guessing what you are using is counting the carbs from the Swerve.

    I just made this with half of all the ingredients except for Swerve & spices in a bread pan. I also used confectioner’s Swerve and let me tell you it was absolutely amazing! Definitely going to be a staple for me. I also included MCT oil powder when I added baking powder.

    1. Yes, absolutely. You may need to adjust baking time down by 10-20 minutes. Keep a close eye on it the first time you bake it in a bundt pan so you’ll know the time difference.

    I converted this to a “banana” snack cake by subbing the vanilla extract for 2 tsp banana extract (Olive Nation makes the best real banana extract) and stirring in 1 cup chopped walnuts before baking. I also subbed the Swerve for 1/2 c Lakanto Classic. Topped with a Keto cream cheese buttercream frosting.
    It was delicious! Next time I will probably reduce the sweetener to 1/3c, but otherwise it was perfect. The texture and flavor was spot on.
